Stuffed Bell Peppers

Simple, colorful, and surprisingly comforting — the kind of meal that feels like you tried (even when you didn’t)


This is one of those meals that looks like you put in way more effort than you actually did.


And I’m not mad about that 😄


Stuffed bell peppers have that “home-cooked, sit-down dinner” feel… but they’re really just a mix, stuff, and bake situation.


I started making these on nights when I wanted something that felt balanced — a little hearty, a little fresh, and not too heavy.


And the best part?


You can clean out the fridge a little while you’re at it.



Ingredients


  • 4 bell peppers

  • 1 cup cooked brown rice

  • 1 cup black beans

  • 1 cup corn

  • 1 tomato, diced

  • 1 tsp cumin

  • 1 tsp chili powder

  • Salt & pepper



Instructions


  1. Preheat oven to 375°F.

  2. In a bowl, mix rice, black beans, corn, diced tomato, cumin, chili powder, salt, and pepper.

  3. Cut tops off bell peppers and remove seeds.

  4. Stuff mixture evenly into each bell pepper.

  5. Place peppers in a baking dish.

  6. Cover and bake for 30 minutes.

  7. Uncover and bake an additional 10 minutes until peppers are tender.



Tips & Serving Ideas



Pick your colors

Use a mix of red, yellow, and green peppers — it makes the whole dish feel brighter and more fun.


Make it your own

Add ground beef, turkey, or even shredded chicken if you want to bulk it up.


Don’t overbake

You want the peppers soft, not falling apart.


Top it off

A little shredded cheese, sour cream, or avocado on top takes this to the next level.

Even if the day was busy… even if dinner felt like an afterthought…
