Instructions


1. Preheat the Oven

5. Fill the Molds

Divide the remaining spinach, reserved roasted red peppers, and the rest of the shredded cheese evenly among the molds.


Pour the egg mixture into each mold until about 3/4 full.


6. Create a Water Bath

Place the filled molds into a larger baking dish.


Add about 2 inches of warm water to the baking dish.


Cover the entire dish loosely with aluminum foil.


7. Bake

Bake for approximately 1 hour, or until the egg bites are set in the center.
