Slow Cooker Greek Chicken

This is one of those recipes I lean on when I want something that feels a little lighter—but still full of flavor.


You toss everything in the slow cooker, walk away, and come back to the kind of meal that tastes like you spent all day in the kitchen.


The lemon, garlic, and herbs give it that fresh, Mediterranean feel… and the best part?

It’s versatile enough to serve a few different ways depending on what your family is in the mood for.



Ingredients


  • 2 lbs boneless skinless chicken breast or thighs

  • 1 onion, thinly sliced

  • 1/4 cup chicken broth

  • 1 lemon, juiced (about 3 tablespoons)

  • 1 tbsp olive oil

  • 4 garlic cloves, minced

  • 1 1/2 tsp dried oregano

  • 1 1/2 tsp dried thyme

  • 1 tsp fine sea salt

  • 1/2 tsp black pepper



Instructions


  1. Place chicken in the bottom of the slow cooker and add sliced onion on top.

  2. In a bowl, whisk chicken broth, lemon juice, garlic, olive oil, oregano, thyme, salt, and pepper.

  3. Pour mixture evenly over the chicken and onions.

  4. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until chicken reaches 165°F.

  5. Shred the chicken in the slow cooker so it soaks up all those flavorful juices before serving.
