This Slow Cooker Cracker Barrel Style Roast Beef is rich, tender, comforting, and loaded with savory onion flavor. The chuck roast cooks low and slow until it practically falls apart with a fork, while the homemade gravy turns into pure comfort-food goodness.
Ingredients:
3 lbs chuck roast
2 tsp salt
2 tsp pepper
1 tsp dried oregano
1/2 tsp garlic powder
1 tbsp olive oil
1 small yellow onion diced
1 can French Onion Soup
1 cup beef broth
2 tbsp cornstarch
Instructions:
Pat roast dry and season with salt, pepper, garlic powder, and oregano.
Heat olive oil in skillet over medium-high heat. Sear roast 2–3 min per side until browned.
Transfer roast to slow cooker.
Sauté onions 5–7 min until soft. Add to slow cooker.
Pour in French onion soup and beef broth.
Cover and cook on low 8–10 hours until fork tender.
Remove roast and shred with forks.
Mix cornstarch with 2 tbsp cold water. Stir into slow cooker juices and cook on high until thickened.
Return beef to slow cooker and coat with sauce.
