On busy days, when you don’t feel like standing over the stove but still want something warm, flavorful, and homemade—this is the kind of meal that saves the day. You toss everything in the slow cooker, go about your day, and come back to a kitchen that smells like you’ve been cooking for hours.


Around here, this is a go-to. It’s simple, hearty, and always a hit. And the best part? You can dress it up however your family likes—keep it classic or pile it high with all the toppings.



These slow cooker chicken tacos are tender, juicy, and packed with bold flavor thanks to a perfect blend of spices, salsa, and broth. The chicken shreds beautifully and soaks up every bit of that delicious sauce.


Ingredients:


• 1 lb boneless skinless chicken breasts

• 32 oz low-sodium chicken broth

• 1 cup salsa

• 1/2 cup white onion, diced

• 1/4 cup taco sauce

• 2 roma tomatoes, diced

• 2 garlic cloves, minced

• 2 tsp onion powder

• 2 tsp garlic powder

• 1 tsp ground cumin

• 1 tsp salt

• 1/2 tsp black pepper

• 1/2 tsp chipotle powder

• 1/2 tsp smoked paprika

• 1/4 tsp cayenne pepper

• 8 flour tortillas



How to Make It:


  1. Add all ingredients (except tortillas) to the slow cooker.

  2. Cook on LOW for 5–6 hours or HIGH for 3–4 hours.

  3. Once chicken is tender, shred it using two forks right in the slow cooker.

  4. Serve in warm tortillas with your favorite toppings.



• For extra flavor, lightly toast your tortillas before serving.

• Want it milder? Skip or reduce the cayenne and chipotle powder.

• This chicken is great for more than tacos—use it for burrito bowls, nachos, or quesadillas.

• Leftovers store beautifully and taste even better the next day.

• Add toppings like shredded lettuce, cheese, sour cream, avocado, or fresh cilantro for that full taco night experience.
