Ingredients
Pancakes
1 cup all-purpose flour
1 cup whole wheat flour
2 tsp baking powder
1/2 tsp ground ginger
1/2 tsp ground cinnamon
1/4 tsp kosher salt
2 large eggs
1 2/3 cups milk
1 tbsp pure maple syrup or honey
1 tsp pure vanilla extract
1 large peach, thinly sliced
Butter, oil, or nonstick spray for cooking
For Serving
Butter
Maple syrup
Whipped cream (optional)
Instructions
In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, ginger, cinnamon, and salt.
In a separate bowl, whisk together the eggs, milk, maple syrup (or honey), and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
Let the batter rest for 10 minutes.
Heat a lightly greased skillet or griddle over medium-low heat.
Pour about 1/4 cup of batter onto the skillet for each pancake. Arrange 3–4 peach slices on top of each pancake.
Cook until bubbles begin to form on the surface, about 3 minutes. Flip carefully and cook another 2–3 minutes until golden brown and cooked through.
Serve warm with butter, maple syrup, whipped cream, or extra peach slices.
Tips for the Best Peach Pancakes
Use ripe peaches for the sweetest flavor.
Leave a few small lumps in the batter for fluffier pancakes.
Fresh peaches work best, but frozen peaches can be used if thawed and drained well.
Keep finished pancakes warm in a 200°F oven while cooking the remaining batches.
Add chopped pecans or walnuts for extra texture and crunch.
Variations
Peach Cobbler Pancakes
Add an extra sprinkle of cinnamon sugar over the peaches before flipping.
Honey Peach Pancakes
Use honey instead of maple syrup in the batter and drizzle extra honey on top before serving.
Peach & Cream Pancakes
Top with whipped cream and fresh peach slices for a dessert-inspired breakfast.
Peach Pecan Pancakes
Fold chopped pecans into the batter for a Southern-inspired twist.
What to Serve with Peach Pancakes
These pancakes pair beautifully with:
Crispy bacon
Breakfast sausage
Scrambled eggs
Fresh fruit salad
Greek yogurt
Orange juice
Hot coffee or tea
Storage & Reheating
Store leftover pancakes in an airtight container in the refrigerator for up to 3 days.

These Peach Pancakes are fluffy, flavorful, and filled with fresh summer goodness. The combination of sweet peaches, warm spices, and hearty whole wheat flour creates a breakfast that feels both comforting and special.
