There’s just something about a fresh crunchy slaw sitting next to tacos, burgers, grilled chicken, or smoky barbecue that instantly makes a meal feel complete.
This Mexican Taco Slaw is one of those simple recipes I keep coming back to because it’s fresh, colorful, zippy, and packed with flavor without needing a long ingredient list. The lime dressing gives it a bright tangy kick, while the jalapeño and cilantro bring that fresh Southwest flavor I grew up loving here in Tucson.
I especially love making this during warmer months because it feels light and refreshing but still hearty enough to pile onto tacos, sandwiches, pulled pork, burgers, or even burrito bowls. And honestly? Sometimes I stand at the fridge eating little bites straight from the bowl because it’s that good.
The best part is that it gets even better after chilling for a bit, making it perfect for cookouts, potlucks, meal prep, taco nights, or busy weekday dinners.
This Mexican Taco Slaw is crisp, creamy, tangy, and full of bold fresh flavor. The homemade lime dressing coats every bite beautifully and gives the slaw that irresistible taco-shop taste.
For the Dressing:
1/4 cup olive oil
1/4 cup lime juice
3 tbsp red wine vinegar
1 tbsp lime zest
1 tbsp honey
1/4 tsp cumin
1/4 tsp garlic powder
Salt & pepper
For the Slaw:
16 oz coleslaw mix
1/4 cup cilantro
1/4 cup purple onion
1 jalapeño, sliced
Instructions:
Whisk dressing ingredients until combined.
Add slaw mix, cilantro, onion, jalapeño to bowl.
Pour dressing over top.
Toss until evenly coated.
Serve or chill 1 hour.
This slaw has the perfect balance of cool crunch, citrusy brightness, and just enough heat to keep every bite interesting.
Remove jalapeño seeds for a milder slaw.
Add avocado right before serving for extra creaminess.
This is amazing on fish tacos, pulled pork sandwiches, or burgers.
Chill before serving if you want the flavors to really come together.
A sprinkle of cotija cheese on top takes it over the top.
