This is one of those recipes that doesn’t try too hard… but still steals the show.
It’s fresh, colorful, a little sweet, a little spicy — and somehow goes with everything.
I started making this on days when I didn’t feel like cooking something heavy. Something quick, something light… something that still felt like real food.
And every single time?
It ends up being the first thing gone.
Whether it’s scooped with chips, piled onto tacos, or eaten straight out of the bowl (no judgment here 😄), this salsa just works.
Ingredients
2 ripe mangoes, diced
1 avocado, diced
½ red onion, finely chopped
1 jalapeño, seeded & minced
2 tbsp fresh cilantro, chopped
1 tbsp lime juice
Salt, to taste
Instructions
Add mango, avocado, onion, jalapeño, and cilantro to a bowl.
Drizzle with lime juice and sprinkle with salt.
Gently toss to combine (don’t overmix — keep those avocado chunks intact).
Serve immediately while fresh.
Tips & Serving Ideas
Use ripe but firm avocados
Too soft and they’ll turn into guacamole real quick.
Adjust the heat
Leave a few jalapeño seeds in if you like a little extra kick 🔥

This one doesn’t love sitting too long — it’s at its peak right after mixing.
