They’re soft, gooey, buttery, and packed with bright lemon flavor that makes every bite taste like sunshine on a warm afternoon. The little drizzle of lemon glaze on top takes these from classic cereal treats to something extra special without adding much extra work.
I love making these during spring and summer when I want an easy dessert that feels light, cheerful, and homemade. Around here, they disappear fast anytime I bring them to family gatherings, BBQs, or just set them on the kitchen counter for snacking.
And honestly? That sweet lemon smell while making them is reason enough to whip up a batch.
These lemony Rice Krispie treats are soft, citrusy, and loaded with marshmallow goodness with the perfect balance of sweet and tangy flavor.
Ingredients:
1 lemon, zested and juiced
1 tbsp granulated sugar
1/2 cup powdered sugar
6 tbsp salted butter
16 ounce bag mini marshmallows, divided
1/2 tsp lemon extract
1/2 tsp vanilla extract
6 cups Rice Krispies cereal
Instructions:
Zest lemon. Mix with granulated sugar until crumbly. Set aside.
Juice lemon. Whisk with powdered sugar until smooth. Set aside.
Line a 9-inch square baking dish with parchment paper.
Melt butter over medium heat. Add marshmallows (reserve 1 cup), reduce heat, and stir until melted.
Remove from heat. Stir in lemon and vanilla extracts.
Add cereal and remaining marshmallows. Mix gently.
Press into dish. Drizzle glaze and sprinkle lemon sugar on top.
Let set 1 hour. Cut and serve.
Butter your spatula or hands lightly to keep the mixture from sticking while pressing into the pan.
Fresh lemon zest gives the brightest flavor, so don’t skip it.
For extra lemon flavor, add a tiny bit more zest on top before serving.
Store covered at room temperature for up to 3 days for the best texture.
