One night, staring into the fridge with leftover birria and consommé, I didn’t feel like doing anything complicated. I just wanted something quick, warm, and satisfying. That’s when this birria ramen came together—and now it’s one of my favorite “why didn’t I do this sooner?” meals.
Living here in Tucson, where bold flavors are part of everyday life, this recipe feels like the perfect mix of comfort and creativity. It’s simple, it stretches your leftovers, and somehow turns into something that feels like a whole new meal.

This Leftover Birria Ramen is rich, flavorful, and incredibly easy to throw together. It takes everything you love about birria and turns it into a cozy, comforting bowl of ramen with almost no extra effort.
Ingredients:
• Leftover birria + consommé
• 2 packs ramen noodles (no seasoning)
• 2 soft-boiled eggs
• Chopped cilantro
• Lime
How to Make It:
Bring a pot of water to a boil and cook the ramen noodles according to package directions (without the seasoning packet). Drain and set aside.
Divide the cooked noodles into serving bowls.
Top the noodles with shredded leftover birria.
Heat the consommé until hot, then ladle it generously over the noodles and meat.
Add soft-boiled eggs, chopped cilantro, and a squeeze of fresh lime. Serve hot.
