Fresh, hearty, and loaded with bold flavors — the kind of salad that actually feels like a full meal

This is not one of those “light little side salads.”

This is the kind of salad that shows up with personality.

It’s got crunch from the lettuce, richness from the meats and cheese, a little bite from the olives, and that tangy dressing that pulls everything together.

I started making this when I wanted something fresh… but still filling enough that nobody was asking, “What else are we having?”

And let me tell you—this one holds its own.

Ingredients

For Salad:

  • 3 cups romaine lettuce, coarsely chopped

  • 1 green bell pepper, seeded & diced

  • 2 Roma tomatoes, seeded & diced

  • 1/2 cup pitted Kalamata olives

  • 1/2 cup pitted green olives

  • 1 cup diced deli ham slices

  • 1 cup diced hard salami slices

  • 1 cup diced pepperoni slices

  • 1/2 cup diced provolone cheese slices

For Dressing:

  • 1/4 cup olive oil

  • 2 Tbsp red wine vinegar

  • 1 tsp Italian seasoning

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  • 2 Tbsp grated Parmesan cheese

Instructions

  1. In a large bowl, add all salad ingredients.

  2. In a small bowl or jar, whisk or shake together dressing ingredients until well combined.

  3. Pour dressing over the salad and toss until everything is evenly coated.

  4. Serve immediately for best freshness.

Tips & Serving Ideas

Chop everything evenly

It makes every bite balanced—and that’s what makes this salad so good.

Make it ahead (kind of)

Prep everything, but wait to add dressing until right before serving so it stays crisp.

Turn it into a meal

Add grilled chicken or serve with warm bread on the side.

Perfect for…

  • Lunch meal prep

  • Potlucks

  • Summer dinners

  • When you want something fresh but still satisfying

A Little Kitchen Moment

This is one of those dishes that surprises people.

They think it’s just a salad…

Until they take a bite.

And suddenly it’s, “Wait… this is REALLY good.”

It’s fresh, filling, and just a little indulgent all at the same time.

And honestly?

That’s the sweet spot right there. 💛
