Messy, hearty, and absolutely irresistible — the kind of dinner that feels like a treat disguised as a meal

This is one of those dinners that disappears fast.
It’s warm, a little messy, full of flavor… and somehow ends with everyone going back for “just one more scoop.”
I started making this on nights when I didn’t want anything complicated but still wanted something that felt fun.
Because let’s be honest—when you turn dinner into something scoopable, customizable, and just a little indulgent…
Nobody complains.
Ingredients
1½ lb lean ground beef
1 cup chopped onion
2 cans chili beans (undrained)
8 oz tomato sauce
1 can Rotel (undrained)
1 taco seasoning packet
½ cup water
Instructions
In a skillet, brown ground beef and chopped onion until fully cooked.
Drain excess grease if needed.
Add taco seasoning and ½ cup water, then stir to combine.
In a slow cooker, add chili beans, tomato sauce, and Rotel.
Stir in the seasoned beef mixture.
Cook on HIGH for 3–4 hours or LOW for 5–6 hours until heated through and flavors combine.
