Fresh Blueberry Vinaigrette

Sweet, Tangy, and So Easy


This is one of those little recipes that feels fancy… but comes together in minutes with things you probably already have in your kitchen. And around here, those are my favorite kind.


Living in Tucson, I’m always looking for ways to keep meals feeling fresh and light—especially when it’s warm out and turning on the oven just isn’t happening. This vinaigrette has become one of my go-to “brighten everything up” recipes. Just a simple salad, maybe some grilled chicken on the side, and suddenly dinner feels a little extra special.


I also love how something as small as a homemade dressing can change the whole mood of a meal. It reminds me that it doesn’t take much to make something beautiful.

Even something as simple as whisking together a dressing can be done with love and intention.



This Blueberry Vinaigrette is sweet, tangy, and full of fresh flavor. It’s perfect over salads, drizzled on grilled chicken, or even as a light marinade.


Ingredients:


• 1 cup blueberries — smashed

• 1/4 cup vinegar

• 3 tbsp honey

• 1 tbsp lemon juice

• 1/2 cup olive oil

• Salt & pepper to taste



How to Make It:


  1. In a bowl or jar, mix together the vinegar, honey, and lemon juice.

  2. Smash the blueberries until they’re juicy and pulpy.

  3. Add the blueberries and olive oil to the mixture.

  4. Seal and shake well (or whisk) until everything is combined.

  5. Season with salt and pepper to taste.


That’s it—simple, fresh, and ready to pour over just about anything.



• If you like it smoother, you can blend it instead of smashing the berries.

• Taste and adjust—add more honey for sweetness or more lemon for brightness.

• Store in the fridge and give it a good shake before using.

• Try it over spinach salad with strawberries, nuts, and grilled chicken—so good.

• This also makes a beautiful drizzle over roasted veggies for something a little different.
