This Easy Pork Chile Verde is the kind of recipe I love having in my back pocket for busy days when I still want something warm, homemade, and full of flavor on the table.
It’s simple ingredients, minimal prep, and your slow cooker does most of the work. And let me tell you… when that pork has been cooking all day and you lift the lid? The smell alone is enough to bring everyone into the kitchen.
This is one of those meals that feels like comfort food with a little kick. Perfect for tacos, family dinners, or just a cozy night at home.
Ingredients
3–4 lb pork shoulder or pork butt
16 oz salsa verde (or Hatch green chile sauce)
1 jalapeño, finely chopped
Kosher salt & pepper
Fresh cilantro
Flour tortillas, for serving
Optional toppings:
Onion
Avocado
Sour cream
Cheese
Instructions
Season the pork with salt and pepper on all sides.
In a large pan, brown the pork on all sides over medium-high heat (about 15 minutes total).
Transfer the pork to your slow cooker.
Pour the salsa verde over the pork.
Add the chopped jalapeño.
Cover and cook on LOW for 8 hours, until the pork is tender and easy to shred.
Shred the pork, mix it into the sauce, and serve warm in tortillas.
