Some days I’m cooking a big spread for family, and other days it’s just me and my daughter at the table—but this kind of dish works for both. It’s easy, it’s cozy, and it brings that warm, familiar flavor that feels like home.

This Mexican rice is quick, hearty, and full of flavor—with a little cheesy twist that makes it extra comforting. It’s the perfect side dish for tacos, enchiladas, or honestly… just a bowl on its own.
Ingredients:
• 1 tbsp canola oil or vegetable oil
• 1/2 cup white onion, diced
• 1 cup green bell pepper, diced
• 10 oz frozen corn
• 1 cup low-sodium chicken broth
• 1 cup salsa (any variety)
• 1 1/2 cups instant rice (Minute Rice)
• 1/2 cup sharp cheddar cheese, shredded
How to Make It:
Heat oil over medium heat in a large skillet.
Cook the diced onion and bell pepper until soft and fragrant.
Add corn, chicken broth, and salsa. Bring everything to a gentle boil.
Stir in the instant rice, cover, and remove from heat.
Let it sit for about 5 minutes so the rice can absorb all that flavor.
Stir in the shredded cheese, fluff with a fork, and serve warm.
