This Easy Baked Pesto Chicken is one of those recipes I come back to again and again. It’s quick to prep, uses simple ingredients, and somehow comes out looking and tasting like something you’d order at a restaurant.
The pesto, tomatoes, and melty cheese all come together in the oven and create this fresh, comforting dish that works for a busy weeknight or even when you have family over.
And the best part? It’s one of those meals where you don’t have to overthink anything — just layer it up and let the oven do the work.
Ingredients
2 boneless, skinless chicken breasts
¼ cup basil pesto
1 cup shredded mozzarella
¼ cup grated Parmesan
1 tomato, sliced
1 tbsp olive oil
Salt & pepper
Instructions
Preheat your oven to 375°F.
Season the chicken with salt and pepper, then place in a greased baking dish.
Spread pesto over each piece of chicken, then layer sliced tomatoes on top.
Sprinkle with mozzarella and Parmesan cheese.
Bake for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F.
Let rest for 5 minutes, then serve warm.
