Sweet, Simple & So Fun!


There’s something about Easter that just brings out the sweet, playful side of the kitchen, isn’t there? Around here in Tucson, spring starts peeking in with that warm sunshine, and suddenly I feel like making things that are colorful, cheerful, and just a little bit extra fun for the table. This little bunny dessert is exactly that.


I first started making treats like this when my kids were younger, trying to create those “wow” moments without spending all day in the kitchen. Now as a grandma, I still love that same feeling—simple recipes that make people smile the second they see them. And let me tell you, this bunny cheese ball? It’s one of those recipes that gets everyone asking, “Wait… you made that?!”


It reminds me of how God shows up in the small, joyful details of life. Not everything has to be complicated to be meaningful. Sometimes the sweetest moments come from something simple, shared with people you love. Like it says in Psalm 34:8, “Taste and see that the Lord is good.” And this little dessert? Oh, it definitely helps you do both 😊


This Easter Bunny Dessert Cheese Ball is creamy, sweet, and just the right mix of fun and easy. It’s perfect for family gatherings, church potlucks, or just a cozy little Easter at home.



Ingredients:


• 16 oz cream cheese – softened

• 2 tbsp sugar

• 1 cup strawberry cake mix – heat treated

• 1/2 cup sprinkles

• 1/2 cup white chocolate chips

• 7 oz shredded coconut

• 6–8 pink chocolate candies

• Vanilla wafers or graham crackers



How to Make It:


  1. In a large bowl, mix the softened cream cheese, sugar, and heat-treated strawberry cake mix until smooth and creamy.

  2. Stir in the sprinkles and white chocolate chips until everything is evenly combined.

  3. Cover and chill the mixture in the fridge for about 1 hour so it firms up.

  4. Once chilled, shape the mixture into 1 large ball (for the body), 2 medium balls (for the feet), and 1 small ball (for the tail).

  5. Roll each piece in shredded coconut until fully coated. This gives it that soft “bunny fur” look.

  6. Assemble your bunny on a serving plate. Use the pink chocolate candies to create the paw pads on the feet.

  7. Chill again until ready to serve so everything holds its shape nicely.



Serve it with vanilla wafers or graham crackers for dipping, and watch it disappear faster than you expect!



• Heat treat your cake mix before using to keep everything safe (just a quick bake or microwave does the trick).

• If the mixture feels too soft while shaping, pop it back in the fridge for a bit—no stress.

• You can swap strawberry cake mix for funfetti or vanilla for a different flavor.

• Let the kids help assemble the bunny—it turns into a memory, not just a recipe.

• Don’t worry about perfection—this is one of those “imperfectly adorable” desserts that people love even more because it’s homemade.
