Creamy Rice Pudding with Cooked Rice

This is one of those simple, comforting recipes that just feels like home. Rice pudding has been around forever for a reason—it takes humble ingredients and turns them into something warm, sweet, and satisfying.


I love this version because it uses cooked rice, which makes it perfect for using up leftovers instead of letting them go to waste. Around here, nothing gets wasted if I can help it—especially when it can turn into a dessert like this.


There’s something about standing at the stove, slowly stirring a pot of something warm, that just settles your heart a bit. It reminds me that even the simplest things can be a blessing. “Taste and see that the Lord is good…” – Psalm 34:8 Sometimes that looks like a cozy bowl of something sweet at the end of a long day.



This Creamy Rice Pudding is rich, lightly spiced, and filled with soft raisins for that classic flavor. It’s the perfect way to turn leftover rice into a comforting dessert.


Ingredients:


• 1 1/2 cups cooked white rice

• 1 cup whole milk

• 1/4 tsp kosher salt

• 1 egg, beaten

• 1/2 cup heavy cream

• 1/4 tsp ground cinnamon

• Pinch ground nutmeg

• 1/3 cup granulated sugar

• 1/3 cup golden raisins

• 1/3 cup raisins

• 1 tbsp unsalted butter

• 1/2 tsp vanilla extract



How to Make It:


  1. In a saucepan, combine cooked rice, milk, and salt over medium-low heat. Stir occasionally and cook until slightly thickened, about 10 minutes.

  2. In a separate bowl, whisk together the beaten egg, heavy cream, cinnamon, and nutmeg.

  3. Stir the sugar into the rice mixture until fully combined.

  4. Slowly pour in the egg mixture while stirring constantly to prevent curdling.

  5. Add both types of raisins and continue cooking, stirring occasionally, until thick and creamy (about 5–8 minutes).

  6. Remove from heat and stir in butter and vanilla. Let cool for about 10 minutes before serving.



• Stir often once the egg mixture is added to keep it smooth and creamy.

• Want it thicker? Let it cook a little longer—it will also thicken as it cools.

• Prefer it less sweet? You can slightly reduce the sugar without losing that cozy flavor.

• Serve warm for comfort, or chilled for a refreshing dessert.

• Sprinkle a little extra cinnamon on top right before serving for that classic finish.
