Cozy, Simple, and Full of Flavor


This is one of those meals that feels like a warm hug at the end of a long day. You know the kind—nothing fancy, nothing complicated, just something comforting simmering on the stove while the house starts to slow down for the evening.


Here in Tucson, even when it’s warm outside, there are nights when you just want something creamy and cozy. This broccoli pasta has become one of those “go-to” dinners for me and my daughter. It’s simple, it uses ingredients I usually already have, and somehow it always hits the spot.


I love how God meets us in these everyday moments—right in the middle of stirring a pot or setting the table.

This Creamy Broccoli Pasta is rich, comforting, and comes together in one pot—perfect for busy nights when you still want something homemade.


Ingredients:


• 2 tbsp butter

• 1 small onion — diced

• 1/2 tsp salt

• 1/4 tsp black pepper

• 3 cloves garlic

• 2 tsp Italian seasoning

• 1/4 tsp red pepper flakes

• 2 1/2 cups chicken broth

• 1 1/2 cups milk

• 8 oz pasta

• 3 cups broccoli

• 2 tbsp lemon juice

• 1/2 cup Parmesan

• 2 tbsp parsley or basil



How to Make It:


  1. Melt butter in a large pot and cook the diced onion for about 4 minutes until soft and fragrant.

  2. Add garlic, Italian seasoning, and red pepper flakes. Stir and cook for about 30 seconds.

  3. Pour in chicken broth and milk, then bring everything to a gentle boil.

  4. Add pasta and cook for about 5 minutes, stirring occasionally.

  5. Add broccoli and continue cooking 5–7 minutes until the pasta is tender and broccoli is just right.

  6. Stir in lemon juice, Parmesan cheese, and fresh herbs.

  7. Let it rest for about 5 minutes to thicken, then serve warm.


It comes out creamy, flavorful, and just a little bright from that lemon—such a good balance.



• Cut broccoli into small pieces so it cooks evenly with the pasta.

• If it gets too thick, add a splash of broth or milk to loosen it up.

• Fresh lemon juice at the end really wakes up the whole dish—don’t skip it.

• Add grilled chicken if you want to make it a heartier meal.

• This is one of those dishes that tastes even better the next day.
