Country Ranch Green Beans & Potatoes

Hearty, comforting, and packed with flavor — the kind of side dish that quietly steals the whole meal


You ever make a “side dish” that somehow becomes the main event?


This is that recipe.


It’s simple ingredients—green beans, potatoes, bacon—but when it all comes together with that ranch seasoning and slow simmer…


It turns into something rich, savory, and downright comforting.


This is the kind of dish that reminds me of big family meals, where there’s always that one pot on the stove everyone keeps going back to “just for a little more.”


And somehow… that pot is always empty first.



Ingredients


  • 1 lb fresh green beans, trimmed & cut into 1-inch pieces

  • 1 lb baby potatoes, halved or quartered

  • 6 slices bacon, diced

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 1 packet (1 oz) ranch seasoning mix

  • 1 cup chicken broth

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • Salt & pepper, to taste

  • 1 Tbsp olive oil (optional)



Instructions


  1. In a large skillet or pot, cook diced bacon over medium heat until crispy (about 8–10 minutes). Remove and set aside.

  2. In the same pan, sauté onion and garlic in the bacon drippings until soft (about 5 minutes). Add olive oil if needed.

  3. Add green beans and potatoes, stirring to coat in flavor. Cook for about 5 minutes.

  4. Pour in chicken broth and stir in ranch seasoning, thyme, and rosemary. Bring to a boil.

  5. Reduce heat and let simmer for 20–25 minutes, or until potatoes are tender.

  6. Stir bacon back in, season with salt and pepper to taste, and serve warm.
