There’s just something about lemon desserts that feels like pure sunshine, isn’t there? Bright, fresh, a little sweet, a little tart—it’s the kind of treat that instantly lifts your mood.


I remember making lemon bars on a warm afternoon here in Tucson, the kitchen filled with that fresh citrus smell, windows cracked open, and just enjoying a slower moment. It’s funny how a simple dessert can turn an ordinary day into something special. These are the kinds of recipes I hold onto—the ones that feel like home, no matter how many times you make them.

These Classic Lemon Bars have a buttery shortbread crust and a smooth, tangy lemon filling that’s perfectly balanced. They’re simple, timeless, and always a crowd favorite.


Shortbread Crust Ingredients:


• 1/2 cup butter, room temperature

• 1/4 cup powdered sugar

• 1 cup all-purpose flour

• Dash of salt


Lemon Filling Ingredients:


• 2 large lemons, zested

• 2 cups sugar

• 1/3 cup lemon juice

• 1/3 cup flour

• 1 tsp baking powder

• 4 eggs



How to Make It:


  1. Preheat oven to 350°F.

  2. Cream together butter and powdered sugar until smooth. Mix in flour and salt until a soft dough forms.

  3. Press dough evenly into a baking pan and bake for about 10 minutes until lightly set.

  4. In a bowl, mix together lemon zest, sugar, lemon juice, flour, baking powder, and eggs until smooth.

  5. Pour the lemon filling over the warm crust.

  6. Bake for 35–40 minutes until the center is set.

  7. Let cool completely before slicing into bars.
