Easy, Creamy & Full of Flavor


Some days you just need a recipe that doesn’t ask much from you—and this is one of those meals. No overthinking, no long prep, just simple ingredients you probably already have and a slow cooker that does all the work.


This buffalo chicken has become one of my go-to recipes here in my Tucson kitchen, especially on busy days when I still want something warm and homemade at the end of it. I love tossing everything in, going about my day, and coming back to a meal that smells amazing and is ready to go.


It’s also one of those “stretch it however you need” meals. Sandwiches, wraps, bowls, even on top of a salad—it works every time. And honestly, it reminds me that life doesn’t always have to be complicated to be good. Proverbs 16:3 says, “Commit to the Lord whatever you do, and he will establish your plans.” Sometimes that looks like trusting a simple recipe to come together just right.



This 5-Ingredient Crock Pot Buffalo Chicken is creamy, tangy, and just the right amount of spicy. It’s perfect for meal prep, family dinners, or feeding a crowd without the stress.


Ingredients:


• 4–5 boneless skinless chicken breasts

• 1 package ranch dressing mix

• 1 bottle buffalo hot sauce

• 1 heaping tablespoon sour cream

• 5 tablespoons butter, cut into pieces



How to Make It:


  1. Place pats of butter in the bottom of your slow cooker, then layer the chicken breasts on top.

  2. Sprinkle the ranch dressing mix evenly over the chicken.

  3. Pour the buffalo sauce over everything.

  4. Cover and cook on low for 5–6 hours or high for 3–4 hours, until the chicken is tender.

  5. Use two forks to shred the chicken, then add the sour cream and mix well until everything is coated and creamy.


Serve it however you like—on buns, in tortillas, over rice, or even by itself.



• Adjust the heat by using more or less buffalo sauce depending on your preference.

• Shred the chicken directly in the slow cooker to soak up all that flavor.

• Great for meal prep—it reheats really well.

• Use leftovers in wraps, sliders, or even stuffed baked potatoes.

• Keep it warm in the crock pot for gatherings—perfect for easy serving.
